Ethan has gotten super picky recently, and hasn’t been wanting to eat anything that I’ve been making for him. Also, Nathan gets up so early in the morning that he’s not wanting something major to eat. Well I was trolling through Pintrest and found a pin for breakfast cookies. So, I thought I would try my hand at them. Turns out they are pretty good, don’t know how healthy, but they sure are yummy!
Here’s the recipe…
Ingredients
- ½ cup butter, melted
- ½ cup coconut oil
- ½ cup honey (I used some local honey we got at the farmer’s market)
- 2 eggs
- 1 teaspoon salt
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- ½ cup buttermilk
- 2 cups oats (any kind)
- 2 cups whole wheat flour
- Chocolate chips, raisins, dried fruit — about ½-1 cup (I added pecans, walnuts, chia seeds and chocolate chips)
Instructions
- Preheat oven to 350 degrees.
- In a large bowl whisk together butter, oil, honey, eggs, salt, vanilla, cinnamon, baking soda and buttermilk.
- Stir in oats and flour and then your mix in.
- Scoop batter on to cookie sheets.
- Bake for 10-15 minutes.
- Allow cookies to sit on cookie sheet for a few minutes until they are set enough to move to cooling racks.
UPDATE!
So these are super soft and spongy. Nathan liked them, but little man just crumbled them all up and wouldn’t even try them.
